PREHEAT AND PREP
Preheat gas or charcoal grill to 450°F – 475°F. High heat is crucial to getting that perfect sear on your salmon without overcooking it!
Then, remove moisture from salmon fillets by patting with a towel . Once your salmon has been patted dry, use a brush to brush vegetable oil onto all sides of every salmon fillet (yes, even the skin side!).
Finally, generously season salmon fillets with salt and pepper.
GRILL THAT SALMON
Once your grill has fully preheated, place salmon fillets directly on the grill, skin side down, and shut the grill. Grill your fillets skin-side down for six minutes (yes, only 6 minutes!).
Then, flip the fillets and grill for a further 2 minutes skin side up. this may give your salmon those perfectly seared grill marks.

CHECK THE TEMP
Salmon must cook to an indoor temperature of 130°F before removing from the grill. If your salmon needs overtime to succeed in an indoor temperature of 130°F (which is common if your fillets are especially thick!), flip back to skin side down and grill for a further 1 minute at a time.
LET IT REST
Remove the salmon from the grill and let rest for five minutes. this may allow the interior temperature of your fillets time to extend to 145°F (even after being faraway from heat!).
SERVE AND ENJOY!
